Ingredients

  • ½ cup quinoa
  • 1½ cups cooked shredded chicken (see note)
  • ½ cup chopped fresh flat-leaf parsley
  • ¼ cup chopped fresh mint
  • ¼ cup sliced green onions
  • 1 pint grape tomatoes, cut in half
  • 1 small cucumber, chopped
  • 3 Tbsp olive oil
  • 2 Tbsp fresh lemon juice
  • ½ tsp salt
  • ¼ tsp pepper
  • ½ cup crumbled feta cheese

Instructions

  1. Cook quinoa according to package directions; place in a bowl, and cool. Add chicken, parsley, mint, onions, tomatoes and cucumber.
  2. Whisk together oil, lemon juice, salt and pepper in a bowl. Add to quinoa mixture with cheese; toss.
  3. Pack in 4 containers; chill until ready to serve.
