Mediterranean Chicken and Quinoa Salad

Ingredients
- ½ cup quinoa
- 1½ cups cooked shredded chicken (see note)
- ½ cup chopped fresh flat-leaf parsley
- ¼ cup chopped fresh mint
- ¼ cup sliced green onions
- 1 pint grape tomatoes, cut in half
- 1 small cucumber, chopped
- 3 Tbsp olive oil
- 2 Tbsp fresh lemon juice
- ½ tsp salt
- ¼ tsp pepper
- ½ cup crumbled feta cheese
Instructions
- Cook quinoa according to package directions; place in a bowl, and cool. Add chicken, parsley, mint, onions, tomatoes and cucumber.
- Whisk together oil, lemon juice, salt and pepper in a bowl. Add to quinoa mixture with cheese; toss.
- Pack in 4 containers; chill until ready to serve.
