Ingredients

  • ½ (12-oz) pkg cauliflower crumbles
  • ½ (13-oz) pkg andouille smoked sausage, sliced
  • 1 red bell pepper, chopped
  • ½ cup chopped onion
  • 1 clove garlic, minced
  • 1 Tbsp olive oil
  • 1 cup diced rotisserie chicken
  • ½ (14.5-oz) can diced tomatoes
  • ¾ cup kidney beans, drained and rinsed
  • ¾ tsp gluten-free Creole seasoning

Instructions

  1. Steam cauliflower according to package directions.
  2. Meanwhile, cook sausage, bell pepper, onion, and garlic in hot oil in a Dutch oven 5 minutes or until tender.
  3. Stir in chicken, tomatoes, beans, and seasoning; reduce heat, and simmer 5 minutes. Stir in cauliflower.
