Bacon-Ranch Chicken-Pasta Bake
Ingredients
- 12 oz whole grain penne pasta
- 12 slices center cut bacon
- 1 onion, chopped
- 1 (1-oz) envelope Ranch dressing mix
- 6 oz ⅓-less-fat cream cheese
- 2 cups shredded rotisserie chicken
- 4 green onions, thinly sliced
- 1 cup shredded mozzarella cheese
Instructions
- Preheat broiler. Cook pasta according to package directions.
- Meanwhile, cook bacon in a large skillet over medium-high heat 6 to 8 minutes or until done, reserving 2 Tbsp drippings in skillet. Crumble bacon.
- Add onion to skillet, and cook 5 to 7 minutes or until tender. Add Ranch mix and cream cheese; cook 4 to 5 minutes or until slightly thickened. Add pasta, chicken, and onions; toss.
- Transfer pasta mixture to a greased 13- x 9-inch baking dish. Sprinkle with cheese and bacon. Broil 2 to 3 minutes or until top is browned.
