Lemony Salmon Burgers
Ingredients
- 1 lemon
- 4 (6-oz) cans wild Alaska pink salmon, drained and flaked
- 3 large eggs, lightly beaten
- ½ cup finely chopped red bell pepper
- ¾ cup panko breadcrumbs
- ¼ cup olive-oil mayonnaise
- 2 Tbsp chopped fresh cilantro (optional)
- 2 Tbsp olive oil
- 6 hamburger buns
Instructions
- Grate zest and squeeze juice from lemon. Combine salmon, eggs, bell pepper, lemon zest, lemon juice, panko, mayonnaise, and, if desired, cilantro in a bowl.
- Shape mixture into 6 large patties. Cook patties in hot oil in a large nonstick skillet over medium heat 4 to 5 minutes per side or until done.
- Serve burgers on buns with desired toppings.
