Lemony Salmon Burgers

Ingredients

  • 1 lemon
  • 4 (6-oz) cans wild Alaska pink salmon, drained and flaked
  • 3 large eggs, lightly beaten
  • ½ cup finely chopped red bell pepper
  • ¾ cup panko breadcrumbs
  • ¼ cup olive-oil mayonnaise
  • 2 Tbsp chopped fresh cilantro (optional)
  • 2 Tbsp olive oil
  • 6 hamburger buns

Instructions

  1. Grate zest and squeeze juice from lemon. Combine salmon, eggs, bell pepper, lemon zest, lemon juice, panko, mayonnaise, and, if desired, cilantro in a bowl.
  2. Shape mixture into 6 large patties. Cook patties in hot oil in a large nonstick skillet over medium heat 4 to 5 minutes per side or until done.
  3. Serve burgers on buns with desired toppings.
