Fiesta Chicken Salad

Ingredients

  • 2 (12.5-oz) cans chunk chicken, drained
  • 1 cup grape tomatoes, chopped
  • 1 cup frozen corn kernels, thawed
  • ½ red onion, diced
  • ½ cup plain Greek yogurt
  • ¼ cup sour cream
  • 1 Tbsp lime juice
  • 2 tsp ground cumin
  • 1 (3-count) pkg romaine lettuce hearts, chopped
  • 2 avocados, sliced
  • 2 Tbsp chopped fresh cilantro

Instructions

  1. Chop chicken. Combine chicken, tomatoes, corn, and onion in a large bowl.
  2. Whisk together yogurt, sour cream, lime juice, and cumin. Toss with chicken mixture. Chill 1 hour, if desired.
  3. Divide romaine among 6 plates; top with chicken salad, avocado, and cilantro.
