Fiesta Chicken Salad
Ingredients
- 2 (12.5-oz) cans chunk chicken, drained
- 1 cup grape tomatoes, chopped
- 1 cup frozen corn kernels, thawed
- ½ red onion, diced
- ½ cup plain Greek yogurt
- ¼ cup sour cream
- 1 Tbsp lime juice
- 2 tsp ground cumin
- 1 (3-count) pkg romaine lettuce hearts, chopped
- 2 avocados, sliced
- 2 Tbsp chopped fresh cilantro
Instructions
- Chop chicken. Combine chicken, tomatoes, corn, and onion in a large bowl.
- Whisk together yogurt, sour cream, lime juice, and cumin. Toss with chicken mixture. Chill 1 hour, if desired.
- Divide romaine among 6 plates; top with chicken salad, avocado, and cilantro.
