Ingredients

  • 2 (8.8-oz) pouches microwavable brown rice
  • 1 (10-oz) pkg diced mango
  • 2 (15.5-oz) cans black beans, drained and rinsed
  • ½ cup roasted, salted pepitas (pumpkin seeds)
  • ½ cup diced red onion
  • ¼ cup extra virgin olive oil
  • 2 Tbsp fresh lime juice
  • ¼ cup chopped fresh cilantro
  • ½ tsp salt
  • ¼ tsp pepper

Instructions

  1. Microwave rice according to package directions. Fluff with a fork, and stir in remaining ingredients.
