Nacho-Cheese Chicken Tenders
Ingredients
- 1 (10-oz) pkg nacho-cheese flavored tortilla chips, crushed
- 2 large eggs
- 2 Tbsp milk
- 1 cup all-purpose flour
- 1 Tbsp chili powder
- 1 tsp salt
- 2 lb chicken tenderloins, cut into 1-inch pieces
- Ketchup
Instructions
- Preheat oven to 400°F. Line a rimmed baking sheet with foil; place a wire cooling rack over foil and spray rack with cooking spray.
- Place crushed chips in a shallow dish. Whisk together eggs and milk in a separate shallow dish.
- Stir together flour, chili powder and salt in a third shallow dish.
- Coat chicken in flour mixture, gently shaking off excess. Dip chicken in egg mixture to coat; dredge in crushed chips, pressing gently to adhere.
- Place chicken on prepared rack, and bake 15 to 20 minutes or until chicken is done.
- Serve with ketchup.
