Nacho-Cheese Chicken Tenders

Ingredients

  • 1 (10-oz) pkg nacho-cheese flavored tortilla chips, crushed
  • 2 large eggs
  • 2 Tbsp milk
  • 1 cup all-purpose flour
  • 1 Tbsp chili powder
  • 1 tsp salt
  • 2 lb chicken tenderloins, cut into 1-inch pieces
  • Ketchup

Instructions

  1. Preheat oven to 400°F. Line a rimmed baking sheet with foil; place a wire cooling rack over foil and spray rack with cooking spray.
  2. Place crushed chips in a shallow dish. Whisk together eggs and milk in a separate shallow dish.
  3. Stir together flour, chili powder and salt in a third shallow dish.
  4. Coat chicken in flour mixture, gently shaking off excess. Dip chicken in egg mixture to coat; dredge in crushed chips, pressing gently to adhere.
  5. Place chicken on prepared rack, and bake 15 to 20 minutes or until chicken is done.
  6. Serve with ketchup.
