Frozen Chocolate-Coconut-Pomegranate Cups

Ingredients

  • 2 cups Greek yogurt (of your choice)
  • 2 Tbsp honey
  • ½ cup mini chocolate chips
  • ½ cup pomegranate seeds (arils)
  • ½ cup shredded coconut (See Note)

Instructions

  1. Line a 12-cup muffin pan with paper baking cups.
  2. Combine yogurt, honey, half each of chocolate chips, pomegranate seeds, and coconut. Stir.
  3. Divide yogurt mixture among 12 cups. Gently tap pan against the counter to level the tops.
  4. Sprinkle with remaining chocolate chips, pomegranate seeds, and coconut.
  5. Freeze 3 to 4 hours or until solid. Remove from pan, and store in an airtight container in freezer.
