Smoked Paprika Chicken over Spanish Rice

Ingredients

  • ½ cup chopped onion
  • 2 Tbsp olive oil, divided
  • 1 cup long-grain brown rice
  • 1 tsp ground turmeric
  • 1½ lb boneless, skinless chicken breasts
  • 1 Tbsp smoked paprika
  • 1½ tsp ground cumin

Instructions

  1. Sauté onion in 1 Tbsp hot oil in a saucepan 4 minutes or until almost tender. Stir in rice and turmeric; cook 1 minute.
  2. Add 2½ cups water to pot; bring to a boil. Cover, reduce heat, and simmer 40 minutes or until liquid is absorbed. Season rice with salt and pepper to taste.
  3. Rub chicken with paprika, and cumin; lightly sprinkle with salt and pepper. Cook chicken in 1 Tbsp hot oil in a large skillet over medium heat 7 minutes per side or until done. Serve chicken over rice.

Side Dish Ingredients

  • 1 (6-oz) pkg baby spinach
  • 1 firm pear, thinly sliced
  • ½ cup sliced roasted almonds
  • ¼ cup olive oil vinaigrette

Side Dish Instructions

  1. Toss together all ingredients in a serving bowl.
