Ingredients

  • 1 lb cod fillets, cut into 3 pieces (or use grouper)
  • ½ tsp garlic powder
  • ¼ tsp salt
  • ¼ tsp pepper
  • 1¼ cups cornflakes cereal, crushed 
  • 1 large egg

Instructions

  1. Preheat oven to 425°F.  Sprinkle fish with garlic powder, salt, and pepper. Place cornflakes in a shallow dish. Lightly beat egg in another shallow dish.
  2. Dip fish in egg; dredge in cornflakes, pressing to adhere. Place on a wire rack; place rack on a foil-line baking sheet lined. Coat fish with cooking spray.
  3. Bake 15 to 20 minutes until golden brown and fish flakes with a fork.

Side Dish Ingredients

  • 2½ Tbsp olive-oil mayonnaise
  • 1½ tsp honey
  • 1½ tsp apple cider vinegar
  • ⅛ tsp kosher salt
  • ½ (12-oz) pkg broccoli slaw
  • ½ (5-oz) pkg baby kale
  • ½ cup seedless red grapes, halved

Side Dish Instructions

  1. Whisk together mayonnaise, honey, vinegar, and salt in a large bowl. Add slaw, kale, and grapes; toss.
