Kid-Style Turkey-Pesto Panini

Ingredients

  • 12 slices bacon
  • 1 (8-oz) jar pesto
  • Mayonnaise
  • 12 slices crusty bread (such as ciabatta, or use five-grain bread)
  • ¾ lb thin sliced deli turkey
  • 12 large thin slices provolone cheese

Instructions

  1. Cook bacon in a large skillet over medium heat until crisp; drain. Preheat panini press.
  2. Spread desired amount of pesto and a little mayonnaise on each slice of bread.
  3. Top 6 slices of bread with turkey, cheese, and bacon. Cover with 6 slices of bread. Coat outsides of sandwiches with olive oil cooking spray.
  4. Cook on panini press 2 to 4 minutes or until golden and cheese is melted. Cut sandwiches in half.

Side Dish Ingredients

  • 1 (28-oz) pkg frozen steak fries
  • 1 Tbsp olive oil
  • ¼ tsp garlic salt
  • ⅛ tsp salt
  • ¼ tsp pepper
  • 2 apples

Side Dish Instructions

  1. Bake fries according to package directions. Combine oil, garlic salt, salt, and pepper in a tiny bowl; drizzle slowly over hot fries, and toss.
  2. Chop apples just before serving.
