Chili-Cheese Sweet Potato Fries
Strawberry-Peach SmoothiesIngredients
- 2 (20-oz) pkg frozen sweet potato fries
- 1 Tbsp olive oil
- 1 (14.7-oz) can vegetarian chili (or use any chili)
- 1½ cups shredded white Cheddar cheese (or use mozzarella)
- 1 (8-oz) carton sour cream (optional)
Instructions
- Place fries on a large rimmed baking sheet; toss with oil and desired amount of salt and pepper.
- Bake according to package directions until crisp.
- Meanwhile, cook chili in a small saucepan over medium heat 3 to 5 minutes or until heated.
- Divide fries among 6 plates; top with chili, cheese, and, if desired, a dollop of sour cream.
Side Dish Ingredients
- 2 cups sliced strawberries
- 2 cups sliced peaches
- 1 (16-oz) carton plain or vanilla Greek yogurt
- ¼ cup orange juice
- 2 Tbsp honey
- Ice cubes
Side Dish Instructions
- Process 1 cup strawberries, 1 cup peaches, half of yogurt, 2 Tbsp orange juice, 1 Tbsp honey and a handful of ice cubes in a blender until smooth.
- Pour smoothie into 3 small glasses; repeat with remaining ingredients.
