Baked Peaches with Pecan Streusel
Ingredients
- 6 peaches, halved
- ¾ cup old-fashioned oats
- ⅓ cup whole wheat flour
- 1 tsp ground cinnamon
- ¼ cup coconut sugar (or use granulated sugar)
- ¼ cup chopped pecans
- ¼ cup coconut oil, melted
- Sweetened whipped cream or ice cream (optional)
Instructions
- Preheat oven to 375°F. Scoop a small amount of flesh from center of each peach to make a well. Place peaches on a foil-lined baking sheet.
- Stir together oats, flour, cinnamon, sugar, nuts, and oil until crumbly. Spoon streusel onto peach halves.
- Bake 20 to 25 minutes or until peaches are tender and streusel is golden brown. Serve with whipped cream or ice cream, if desired.
