Baked Peaches with Pecan Streusel

Ingredients

  • 6 peaches, halved
  • ¾ cup old-fashioned oats
  • ⅓ cup whole wheat flour
  • 1 tsp ground cinnamon
  • ¼ cup coconut sugar (or use granulated sugar)
  • ¼ cup chopped pecans
  • ¼ cup coconut oil, melted
  • Sweetened whipped cream or ice cream (optional)

Instructions

  1. Preheat oven to 375°F. Scoop a small amount of flesh from center of each peach to make a well. Place peaches on a foil-lined baking sheet.
  2. Stir together oats, flour, cinnamon, sugar, nuts, and oil until crumbly. Spoon streusel onto peach halves.
  3. Bake 20 to 25 minutes or until peaches are tender and streusel is golden brown. Serve with whipped cream or ice cream, if desired.
