Smoky Barbecue Ribs

Ingredients
- 2 Tbsp smoked paprika (or use regular)
- 2 tsp garlic salt
- 1 tsp pepper
- 3 lb boneless country-style pork ribs, trimmed
- 1 cup barbecue sauce
- 1 (12-oz) can beer (or use chicken broth)
Instructions
- Combine paprika, garlic salt, and pepper; rub over ribs.
- Place ribs in a greased 5- to 7-quart slow cooker.
- Stir together barbecue sauce and beer; pour over ribs.
- Cover and cook on LOW 8 to 9 hours or until ribs are tender.
Side Dish Ingredients
- 1 lb Yukon Gold potatoes, cut into 1-inch pieces
- ¼ cup chopped fresh parsley
- ¼ cup sour cream
- 2 Tbsp Dijon mustard
- ¾ tsp salt
- ½ tsp pepper
- 2 (8-oz) pkg thin green beans
Side Dish Instructions
- Bring potatoes and water to cover to a boil in a large saucepan; cook 15 minutes or until potatoes are tender.
- Drain. Toss potatoes with parsley, sour cream, Dijon, salt, and pepper.
- Steam green beans according to package directions; season to taste.
