Grilled Chicken with Hoisin-Ginger Sauce

Ingredients

  • 3 Tbsp sweet and sour sauce
  • 2 Tbsp water
  • 1 clove garlic, minced
  • 1½ Tbsp hoisin sauce
  • ⅛ tsp ground ginger
  • ⅛ tsp hot sauce
  • ¾ lb boneless, skinless chicken breasts

Instructions

  1. Stir together sweet and sour sauce, water, garlic, hoisin sauce, ginger, and hot sauce in a saucepan; bring to a boil over medium heat, stirring often. Reduce heat, and simmer 1 minute, stirring often.
  2. Preheat grill or grill pan to medium heat. Cut chicken in half crosswise, and pound to an even thickness in a zip-top plastic bag using the heel of your hand or a meat mallet.
  3. Grill chicken, covered, 12 to 15 minutes or until done, brushing with sauce during last 5 minutes.
  4. Slice chicken, and serve over hot cooked rice.

Side Dish Ingredients

  • ¾ cup long-grain white rice
  • ½ (12-oz) pkg frozen snow peas

Side Dish Instructions

  1. Cook rice according to package directions.
  2. Steam snow peas according to package directions; season with salt and pepper to taste.
