Cheesy Meatballs and Tortellini
Lemony SaladIngredients
- 1 onion, chopped
- 1 (14-oz) pkg Italian-style meatballs, thawed
- 1 Tbsp olive oil
- 1 (19-oz) pkg frozen tortellini
- 1 (28-oz) can crushed tomatoes
- 1 cup water
- 1 Tbsp Italian seasoning
- 1 (8-oz) pkg shredded mozzarella cheese
Instructions
- Cook onion and meatballs in hot oil in a large, deep skillet over medium heat until onion is tender and meatballs are browned.
- Stir in tortellini, tomatoes, water, and Italian seasoning; bring to a boil, cover, reduce heat, and simmer 10 to 12 minutes or until tortellini are tender.
- Sprinkle with cheese; cover and cook 1 minute or until cheese is melted.
Side Dish Ingredients
- 1 (10-oz) pkg chopped romaine lettuce
- 1 (5-oz) pkg garlic croutons
- ½ cup lemon vinaigrette
Side Dish Instructions
- Toss together all ingredients in a bowl just before serving.
