Cheesy Meatballs and Tortellini

Ingredients

  • 1 onion, chopped
  • 1 (14-oz) pkg Italian-style meatballs, thawed
  • 1 Tbsp olive oil
  • 1 (19-oz) pkg frozen tortellini
  • 1 (28-oz) can crushed tomatoes
  • 1 cup water
  • 1 Tbsp Italian seasoning
  • 1 (8-oz) pkg shredded mozzarella cheese

Instructions

  1. Cook onion and meatballs in hot oil in a large, deep skillet over medium heat until onion is tender and meatballs are browned.
  2. Stir in tortellini, tomatoes, water, and Italian seasoning; bring to a boil, cover, reduce heat, and simmer 10 to 12 minutes or until tortellini are tender.
  3. Sprinkle with cheese; cover and cook 1 minute or until cheese is melted.

Side Dish Ingredients

  • 1 (10-oz) pkg chopped romaine lettuce
  • 1 (5-oz) pkg garlic croutons
  • ½ cup lemon vinaigrette

Side Dish Instructions

  1. Toss together all ingredients in a bowl just before serving.
