Oven-Baked Meatballs
Garlicky ZoodlesIngredients
- 2 lb grass-fed ground beef
- 1 lb ground pork
- ½ cup finely chopped sweet onion
- ¼ cup chopped fresh basil
- 2 Tbsp Italian seasoning
- 2 tsp salt
- 1 tsp pepper
- 1 large egg, lightly beaten
- 2 (24-oz) jars organic marinara sauce
Instructions
- Preheat oven to 400°F; line a rimmed baking sheet with foil. Place a wire rack on foil. Stir together beef, pork, onion, basil, Italian seasoning, salt, and pepper in a large bowl. Stir in egg. Shape mixture into 2-inch balls; place on wire rack.
- Bake 20 minutes. Transfer meatballs to a large skillet; add marinara sauce, and cook over medium heat 5 minutes or until sauce is thoroughly heated and meatballs are done.
Side Dish Ingredients
- 4 zucchini
- 2 cloves garlic, minced
- 2 Tbsp avocado oil
- ½ tsp salt
- ½ tsp pepper
Side Dish Instructions
- Cut zucchini into noodles using a spiralizer or cut zucchini lengthwise into ¼-inch-thick slices. Stack 3 zucchini slices at a time, and cut lengthwise into thin strips to resemble strands of pasta.
- Sauté garlic and zucchini in hot oil in a large skillet over medium-high heat 2 to 3 minutes. Sprinkle with salt and pepper.
