Sun-Dried Tomato Pizza Flatbread Sandwiches

Ingredients

  • 2 pieces naan (preferably whole wheat), halved
  • ½ cup marinara sauce
  • 1 (3-oz) pouch sun-dried tomatoes
  • 1 cup shredded mozzarella cheese
  • 2 Tbsp chopped fresh basil
  • 2 tsp olive oil

Instructions

  1. Preheat oven to 350°F. Place 2 flatbread halves on a large rimmed baking sheet. Top with marinara sauce, tomatoes, cheese, seasoning, basil, and remaining 2 flatbread halves.
  2. Brush tops of sandwiches with oil. Bake 8 to 10 minutes or until bread is toasted and cheese is melted.

Side Dish Ingredients

  • 3 cups baby spinach
  • 1 cup grape tomatoes
  • ½ English cucumber, sliced
  • ⅓ cup shredded mozzarella cheese
  • 3 Tbsp balsamic vinaigrette

  1. Toss together all ingredients in a serving bowl.
