Easy Beef & Broccoli

Ingredients

  • 2 Tbsp vegetable oil
  • 1 lb boneless beef sirloin steak or beef top round steak, ¾-inch thick, cut into very thin strips
  • 2 cups broccoli florets
  • 1 medium onion, cut into wedges
  • ⅛ tsp garlic powder or 1 small clove garlic, minced
  • 1 can (10.5-oz) condensed cream of broccoli soup
  • ⅓ cup water
  • 1 Tbsp soy sauce
  • 4 cups hot cooked white rice or egg noodles

Instructions

  1. Heat 1 Tbsp oil in a 10-inch skillet over medium-high heat. Add the beef and stir-fry until well browned. Remove the beef from the skillet.
  2. Heat the remaining oil in the skillet. Add the broccoli, onion and garlic powder and stir-fry until the vegetables are tender-crisp.
  3. Stir the soup, water and soy sauce in the skillet and heat to a boil. Return the beef to the skillet and cook until the mixture is hot and bubbling. Serve the beef mixture over the rice.
