Simple Zucchini-and-Squash Pasta

Ingredients

  • 1 (16-oz) pkg thin spaghetti, broken in half
  • 3 zucchini, quartered and sliced
  • 3 yellow squash, quartered and sliced
  • 2 Tbsp minced garlic
  • 2 Tbsp olive oil
  • 2 (24-oz) jars marinara sauce
  • 1 to 2 cups shredded mozzarella cheese

Instructions

  1. Cook pasta according to package directions.
  2. Meanwhile, cook zucchini, squash, and garlic in hot oil in a large skillet over medium-high heat 5 minutes. Add marinara sauce, and cook 10 minutes or until thoroughly heated. Toss with pasta and cheese. Season with salt to taste.
