Chicken and Vegetable Stir-Fry

Ingredients

  • 2 lb boneless, skinless chicken breasts, cubed
  • 2 Tbsp vegetable oil
  • 1 (20-oz) pkg frozen stir-fry medley
  • 1 tsp garlic powder
  • ⅓ cup soy sauce

Instructions

  1. Cook chicken in hot oil in a large skillet over medium-high heat 5 to 6 minutes or until browned.
  2. Add vegetables and garlic powder; cook 8 minutes or until vegetables are tender. Stir in soy sauce; cook 1 to 2 minutes or until slightly thickened.

Side Dish Ingredients

  • 1½ cups long-grain white rice
  • 2 Tbsp vegetable oil
  • 2 Tbsp soy sauce 
  • ½ tsp garlic powder
  • 3 green onions, thinly sliced

Side Dish Instructions

  1. Cook rice according to package directions. Stir in oil, soy sauce, garlic powder, and onions.
