Italian Tuna Melts

Easy Green Bean Packets and Orange Wedges

Ingredients

  • 1 (5-oz) can albacore tuna in water, drained
  • 1 jalapeño pepper, seeded and finely chopped
  • 1 tsp dried basil
  • 1 tsp capers, drained
  • 1½ Tbsp olive oil
  • 2 tsp red wine vinegar
  • ⅛ tsp black pepper
  • ⅓ cup grape tomatoes, quartered
  • 2 light multigrain English muffins, split
  • 2 (0.67-oz) slices reduced-fat provolone cheese, torn in half

Instructions

  1. Preheat broiler. Stir together tuna, jalapeño pepper, basil, capers, oil, vinegar, and black pepper in a bowl. Gently fold in tomatoes.
  2. Arrange English muffins, cut sides up, on a baking sheet; top with tuna mixture and cheese.
  3. Broil 2 minutes or until cheese is lightly browned.

Side Dish Ingredients

  • 1 (12-oz) pkg green beans
  • 2 tsp olive oil
  • ½ tsp Italian seasoning
  • ⅛ tsp salt
  • 2 oranges, cut into wedges

Side Dish Instructions

  1. Preheat broiler. Spread green beans on a large piece of foil. Drizzle with oil, and sprinkle with Italian seasoning and salt. Seal packet tightly.
  2. Broil 15 minutes or until beans are crisp-tender.
  3. Serve beans and orange wedges alongside tuna melts.
