Cilantro-Lime Crema Chicken

Ingredients

  • 2 lb boneless, skinless chicken breasts
  • 1 (1-oz) envelope taco seasoning mix
  • 1 Tbsp olive oil
  • 1 (8-oz) carton sour cream
  • ¼ cup chopped fresh cilantro
  • 1 Tbsp lime juice 
  • ½ tsp ground cumin

Instructions

  1. Pound chicken to an even thickness in a zip-top plastic bag using the heel of your hand or a meat mallet. Rub chicken with seasoning mix.
  2. Cook chicken, in batches if necessary, in hot oil in a large skillet over medium-high heat 5 minutes per side or until browned.
  3. Meanwhile, combine sour cream, cilantro, lime juice, and cumin. Serve with chicken.

  • 2 large tomatoes, diced
  • 2 avocados, diced
  • 2 Tbsp lime juice
  • 2 cloves garlic, minced
  • ¼ tsp salt
  • ¼ tsp pepper

  1. Toss together all ingredients in a bowl.
