Pesto Baked Fish

Cheesy Tomato Couscous and Steamed Green Beans

Ingredients

  • 6 grouper fillets, thawed
  • 2 Tbsp olive oil
  • 6 Tbsp pesto
  • 2 lemons, sliced

Instructions

  1. Preheat oven to 450°F.
  2. Brush fish with oil; lightly season with salt and pepper. Place fish on a parchment-lined rimmed baking sheet. Top each with 1 Tbsp pesto and 2 to 3 lemon slices.
  3. Bake 10 minutes or until fish flakes easily with a fork.

Side Dish Ingredients

  • 1 (10-oz) pkg plain couscous
  • 2 Roma tomatoes, chopped
  • 1 cup shredded mozzarella cheese
  • 2 (8-oz) pkg thin green beans

Side Dish Instructions

  1. Prepare couscous according to package directions. Add tomatoes, cheese, and salt and pepper to taste.
  2. Steam green beans according to package directions.
