Pesto Baked Fish
Cheesy Tomato Couscous and Steamed Green BeansIngredients
- 6 grouper fillets, thawed
- 2 Tbsp olive oil
- 6 Tbsp pesto
- 2 lemons, sliced
Instructions
- Preheat oven to 450°F.
- Brush fish with oil; lightly season with salt and pepper. Place fish on a parchment-lined rimmed baking sheet. Top each with 1 Tbsp pesto and 2 to 3 lemon slices.
- Bake 10 minutes or until fish flakes easily with a fork.
Side Dish Ingredients
- 1 (10-oz) pkg plain couscous
- 2 Roma tomatoes, chopped
- 1 cup shredded mozzarella cheese
- 2 (8-oz) pkg thin green beans
Side Dish Instructions
- Prepare couscous according to package directions. Add tomatoes, cheese, and salt and pepper to taste.
- Steam green beans according to package directions.
