Ingredients

  • 6 (6-oz) boneless, skinless chicken breasts
  • 2 Tbsp olive oil
  • ¾ cup heavy cream
  • ½ cup light Caesar dressing

Instructions

  1. Pound chicken to an even thickness in a zip-top plastic bag using the heel of your hand or a meat mallet. Sprinkle lightly with salt and pepper, if desired.
  2. Cook chicken, in batches if necessary, in hot oil 5 to 6 minutes per side or until done. Add cream and dressing; cook 4 minutes or until sauce is thickened.

  • 1½ lb small red potatoes, halved
  • 1 (8-oz) carton sour cream
  • 2 Tbsp minced garlic
  • ¾ tsp pepper, divided
  • ½ tsp salt, divided
  • 2 (8-oz) pkg trimmed asparagus

Side Dish Instructions

  1. Bring potatoes and water to cover to a boil in a medium saucepan. Cook 12 minutes or until tender; drain.
  2. Add sour cream, garlic, ½ tsp pepper, and ¼ tsp salt. Mash with a potato masher to desired consistency.
  3. Meanwhile, steam asparagus according to package directions. Toss with ¼ tsp each pepper and salt.
