Pita and Crudités with Hummus

Ingredients

  • 3 (8-oz) boneless, skinless chicken breasts, halved lengthwise
  • 2 red bell peppers, cut into chunks
  • 1 red onion, sliced crosswise into rings
  • 3 Tbsp olive oil
  • 2 Tbsp minced garlic
  • ¾ tsp kosher salt
  • ¾ tsp pepper
  • ½ cup pitted kalamata olives
  • 1 Tbsp chopped fresh oregano
  • ½ cup crumbled feta cheese

Instructions

  1. Preheat oven to 425°F. Toss together chicken, bell peppers, onion, oil, garlic, salt, and pepper on a large rimmed baking sheet; spread in a single layer.
  2. Bake 20 to 25 minutes or until chicken is done.
  3. Stir olives and oregano into bell pepper mixture; sprinkle with cheese.

  • 3 (2.25-oz) whole wheat pita bread rounds, warmed
  • 1 English cucumber, sliced
  • 4 carrots, cut into sticks
  • 1 (10-oz) container roasted garlic hummus

Side Dish Instructions
