Sheet Pan Greek Chicken
Pita and Crudités with HummusIngredients
- 3 (8-oz) boneless, skinless chicken breasts, halved lengthwise
- 2 red bell peppers, cut into chunks
- 1 red onion, sliced crosswise into rings
- 3 Tbsp olive oil
- 2 Tbsp minced garlic
- ¾ tsp kosher salt
- ¾ tsp pepper
- ½ cup pitted kalamata olives
- 1 Tbsp chopped fresh oregano
- ½ cup crumbled feta cheese
Instructions
- Preheat oven to 425°F. Toss together chicken, bell peppers, onion, oil, garlic, salt, and pepper on a large rimmed baking sheet; spread in a single layer.
- Bake 20 to 25 minutes or until chicken is done.
- Stir olives and oregano into bell pepper mixture; sprinkle with cheese.

- 3 (2.25-oz) whole wheat pita bread rounds, warmed
- 1 English cucumber, sliced
- 4 carrots, cut into sticks
- 1 (10-oz) container roasted garlic hummus
