Sheet Pan "Garden Pizza" Chicken

Ingredients

  • 1½ lb boneless, skinless chicken breasts, halved lengthwise
  • 3 Tbsp olive oil
  • 2 cloves garlic, minced
  • ½ tsp kosher salt
  • ½ tsp pepper
  • 1 (15.5-oz) jar marinara sauce
  • 1 (8-oz) ball fresh mozzarella cheese, cut into 6 slices
  • ½ cup thinly sliced mushrooms
  • 2 sweet mini peppers, thinly sliced into rings
  • 2 Tbsp sliced black olives

Instructions

  1. Preheat oven to 425°F. Toss together chicken, oil, garlic, salt, and pepper. Arrange on a large rimmed baking sheet.
  2. Bake 15 minutes. Spoon marinara sauce over chicken; top with cheese, mushrooms, bell pepper, and olives.
  3. Bake 5 to 10 minutes longer or until cheese is melted and chicken is done.

Side Dish Ingredients

  • 2 (12-oz) pkg broccoli florets
  • ¼ cup olive oil
  • 2 tsp minced garlic
  • 2 Tbsp freshly grated Parmesan cheese
  • 2 Tbsp lemon juice

Side Dish Instructions

  1. Combine broccoli, oil, and garlic in a glass bowl.  Cover and microwave at HIGH 4 minutes, stirring once, or until tender.
  2. Stir in cheese and lemon juice.
