Horseradish-Garlic Sauce Flank Steak
Mashed Sweet Potatoes and Green BeansIngredients
- 1½ lb flank steak (or use skirt steak)
- ¾ tsp salt, divided
- ¾ tsp pepper, divided
- ⅓ cup nonfat buttermilk
- 3 Tbsp freshly grated Parmesan cheese
- 2 Tbsp reduced-fat mayonnaise
- 1 Tbsp prepared horseradish
- 2 tsp lemon juice
- 1 clove garlic, minced
- 6 Tbsp chopped fresh flat-leaf parsley
Instructions
- Preheat broiler. Place steak on a lightly greased large rimmed baking sheet. Sprinkle with ½ tsp each salt and pepper.
- Broil 8 minutes or to desired doneness. Let stand 5 minutes before thinly slicing across the grain.
- Combine buttermilk, cheese, mayonnaise, horseradish, lemon juice, garlic, and ¼ tsp each salt and pepper. Spoon sauce over steak, and sprinkle with parsley.

- 2 Tbsp butter
- 3 Tbsp chopped fresh flat-leaf parsley
- 2 (12-oz) pkg green beans
- ¼ tsp salt
- ¼ tsp pepper

- Cook potatoes according to package directions. Stir in butter; sprinkle with parsley.
- Meanwhile, cook green beans according to package directions. Sprinkle with salt and pepper.
