Corn Dog Casserole

Ingredients

  • 1 Tbsp butter
  • ½ (10-count) pkg hot dogs, sliced
  • 1 (8.5-oz) box honey cornbread and muffin mix
  • ½ cup milk
  • ⅓ cup vegetable oil
  • 1 large egg
  • 1 cup shredded Cheddar cheese, divided
  • ¾ cup frozen yellow corn, thawed

Instructions

  1. Preheat oven to 400°F. Melt butter in a skillet over medium-high heat. Add hot dogs, and cook 5 to 6 minutes or until browned.
  2. Meanwhile, stir together cornbread mix, milk, oil, eggs, ½ cup cheese, corn, and hot dogs in a large bowl. Spoon into a lightly greased 1½ quart baking dish, sprinkle with ½ cup cheese.
  3. Bake 30 to 40 minutes or until center is set.

Side Dish Ingredients

  • 1 (1-lb) container pineapple chunks
  • 2 cups seedless green grapes
  • 1 apple, chopped

Side Dish Instructions

  1. Combine all ingredients in a serving bowl.
