Ingredients

  • ½ cup butter, melted
  • 1½ lb boneless, skinless chicken breasts, cut into bite-size pieces
  • 1 head broccoli, cut into florets
  • 1 (0.7-oz) envelope zesty Italian dressing mix
  • ½ tsp crushed red pepper
  • 1 lemon, thinly sliced
  • ¾ cup freshly grated Parmesan cheese

Instructions

  1. Preheat oven to 450°F. Toss together butter, chicken, broccoli, dressing mix, and red pepper in a large bowl.
  2. Arrange lemon slices on a large parchment paper-lined rimmed baking sheet; pour chicken mixture over lemons, and spread in an even layer.
  3. Bake 15 to 20 minutes or until chicken is done; sprinkle with cheese.

  • 2 (12-oz) pkg frozen riced cauliflower
  • 2 cloves garlic, minced
  • 3 Tbsp olive oil
  • ¼ tsp salt

Side Dish Instructions

  1. Cook cauliflower and garlic in hot oil in a large skillet 5 minutes, stirring often, until cauliflower is crisp-tender. Stir in salt; cook 1 minute.
