Sheet Pan Spicy Chicken and Broccoli
Garlicky Cauliflower Rice
Ingredients
- ½ cup butter, melted
- 1½ lb boneless, skinless chicken breasts, cut into bite-size pieces
- 1 head broccoli, cut into florets
- 1 (0.7-oz) envelope zesty Italian dressing mix
- ½ tsp crushed red pepper
- 1 lemon, thinly sliced
- ¾ cup freshly grated Parmesan cheese
Instructions
- Preheat oven to 450°F. Toss together butter, chicken, broccoli, dressing mix, and red pepper in a large bowl.
- Arrange lemon slices on a large parchment paper-lined rimmed baking sheet; pour chicken mixture over lemons, and spread in an even layer.
- Bake 15 to 20 minutes or until chicken is done; sprinkle with cheese.

- 2 (12-oz) pkg frozen riced cauliflower
- 2 cloves garlic, minced
- 3 Tbsp olive oil
- ¼ tsp salt
Side Dish Instructions
- Cook cauliflower and garlic in hot oil in a large skillet 5 minutes, stirring often, until cauliflower is crisp-tender. Stir in salt; cook 1 minute.
