Polenta Rounds with White Bean Puttanesca

Ingredients
- ½ onion, chopped
- 2 Tbsp olive oil, divided
- 1 (15-oz) can low-sodium cannellini beans, drained and rinsed
- 1 (14.5-oz) can no-salt-added diced tomatoes
- 3 Tbsp pitted kalamata olives, coarsely chopped
- 1 Tbsp drained capers
- 1 tsp Italian seasoning
- 1 (18-oz) tube polenta, cut into 9 slices
- 2 Tbsp chopped fresh basil
Instructions
- Cook onion in 1 Tbsp hot oil in a saucepan over medium heat 8 minutes or until very tender.
- Add beans, tomatoes, olives, capers, and Italian seasoning; bring to a boil. Reduce heat, and simmer 8 to 10 minutes or until slightly thickened. If desired, season with salt and pepper to taste.
- Meanwhile, cook polenta in 1 Tbsp hot oil in a large nonstick skillet over medium-high heat 4 to 5 minutes per side or until browned and crisp. Serve sauce over polenta. Sprinkle with basil.
