Barbecue-Ranch Pork Salad
Ingredients
- ½ cup Ranch dressing
- 2 Tbsp barbecue sauce
- 1½ lb boneless pork chops
- 2 Tbsp barbecue seasoning
- 2 Tbsp olive oil
- 2 romaine lettuce hearts
- 2 Roma tomatoes, sliced
- 1 English cucumber, cut into half-moons
- 1 (8-oz) block Cheddar cheese, shredded
Instructions
- Stir together Ranch dressing and barbecue sauce; set aside.
- Cut pork into 1-inch cubes; sprinkle with seasoning. Cook pork in hot oil in a large nonstick skillet over medium-high heat 10 minutes or until done.
- Chop lettuce, and divide among 6 plates. Top with pork, tomatoes, cucumber, and cheese. Serve with dressing.
