Chicken with Jezebel Sauce

Ingredients

  • ½ red onion, thinly sliced
  • 3 Tbsp olive oil, divided
  • 1 cup peach or apricot preserves
  • ⅓ cup water
  • 1 Tbsp prepared horseradish
  • 1 Tbsp whole-grain mustard
  • 1 tsp lemon zest
  • 3 Tbsp lemon juice
  • 1½ lb boneless, skinless chicken breasts
  • ½ tsp salt
  • ½ tsp pepper

Instructions

  1. Cook onion in 1 Tbsp hot oil in a large nonstick skillet over medium heat until tender.
  2. Stir in preserves, water, horseradish, mustard, lemon zest, and juice; cook 3 to 5 minutes or until mixture thickens. Remove from skillet; keep warm, and wipe skillet clean.
  3. Meanwhile, cut chicken in half lengthwise, and pound to an even thickness in a zip-top plastic bag using the heel of your hand or a meat mallet; sprinkle with salt and pepper.
  4. Cook chicken in 2 Tbsp hot oil in same skillet over medium-high heat 5 to 6 minutes per side or until done. Divide chicken among 6 plates. Spoon peach mixture over chicken.

  • 1 (16-oz) pkg frozen green beans
  • ½ tsp salt
  • ½ tsp pepper

  1. Cook rice according to package directions.
  2. Cook green beans according to package directions; sprinkle with salt and pepper.
