Chicken with Jezebel Sauce
Steamed Rice and Green Beans
Ingredients
- ½ red onion, thinly sliced
- 3 Tbsp olive oil, divided
- 1 cup peach or apricot preserves
- ⅓ cup water
- 1 Tbsp prepared horseradish
- 1 Tbsp whole-grain mustard
- 1 tsp lemon zest
- 3 Tbsp lemon juice
- 1½ lb boneless, skinless chicken breasts
- ½ tsp salt
- ½ tsp pepper
Instructions
- Cook onion in 1 Tbsp hot oil in a large nonstick skillet over medium heat until tender.
- Stir in preserves, water, horseradish, mustard, lemon zest, and juice; cook 3 to 5 minutes or until mixture thickens. Remove from skillet; keep warm, and wipe skillet clean.
- Meanwhile, cut chicken in half lengthwise, and pound to an even thickness in a zip-top plastic bag using the heel of your hand or a meat mallet; sprinkle with salt and pepper.
- Cook chicken in 2 Tbsp hot oil in same skillet over medium-high heat 5 to 6 minutes per side or until done. Divide chicken among 6 plates. Spoon peach mixture over chicken.

- ½ tsp salt
- ½ tsp pepper

- Cook rice according to package directions.
- Cook green beans according to package directions; sprinkle with salt and pepper.
