Skillet Chicken Madeira
Mashed Potatoes and Green Beans

Ingredients
- ½ lb boneless, skinless chicken breasts
- ¼ tsp salt
- ¼ tsp pepper
- ½ Tbsp butter
- 3 Tbsp Madeira wine (see Note)
- 2 tsp all-purpose flour
- ⅔ cup low-sodium chicken broth
- 1½ Tbsp heavy cream
- ¼ cup shredded mozzarella cheese
Instructions
- Cut chicken in half lengthwise, and pound to an even thickness with the heel of your hand or a meat mallet; sprinkle with salt and pepper.
- Melt butter in a skillet over medium-high heat. Add chicken, and cook 4 minutes per side or until browned. Remove from skillet and set aside.
- Add madeira; cook 1 minute. Add flour; cook 2 minutes, stirring constantly.
- Stir in broth; cook 5 minutes or until reduced by half. Add cream to skillet along with chicken; cook 5 to 6 minutes or until chicken is done and sauce is thickened.
- Sprinkle chicken with cheese; let stand 1 minute or until cheese melts.

- 1 (12-oz) pkg refrigerated mashed potatoes
- 1 (8-oz) pkg thin green beans
- ⅛ tsp garlic salt
- ⅛ tsp pepper
Side Dish Instructions
- Heat mashed potatoes according to package directions.
- Cook beans according to package directions; toss with garlic salt and pepper.
