Ingredients

  • ½ lb boneless, skinless chicken breasts
  • ¼ tsp salt
  • ¼ tsp pepper
  • ½ Tbsp butter
  • 3 Tbsp Madeira wine (see Note)
  • 2 tsp all-purpose flour
  • ⅔ cup low-sodium chicken broth
  • 1½ Tbsp heavy cream
  • ¼ cup shredded mozzarella cheese

Instructions

  1. Cut chicken in half lengthwise, and pound to an even thickness with the heel of your hand or a meat mallet; sprinkle with salt and pepper.
  2. Melt butter in a skillet over medium-high heat. Add chicken, and cook 4 minutes per side or until browned. Remove from skillet and set aside.
  3. Add madeira; cook 1 minute. Add flour; cook 2 minutes, stirring constantly.
  4. Stir in broth; cook 5 minutes or until reduced by half. Add cream to skillet along with chicken; cook 5 to 6 minutes or until chicken is done and sauce is thickened.
  5. Sprinkle chicken with cheese; let stand 1 minute or until cheese melts.

  • 1 (12-oz) pkg refrigerated mashed potatoes
  • 1 (8-oz) pkg thin green beans
  • ⅛ tsp garlic salt
  • ⅛ tsp pepper

Side Dish Instructions

  1. Heat mashed potatoes according to package directions.
  2. Cook beans according to package directions; toss with garlic salt and pepper.
