Minestrone Soup
Multigrain Rolls
Ingredients
- ½ onion, chopped
- 2 carrots, chopped
- 1 stalk celery, chopped
- 2 cloves garlic, minced
- 1 Tbsp olive oil
- 2 Tbsp tomato paste
- ¼ tsp crushed red pepper
- 1 (32-oz) carton low-sodium chicken broth
- 1 (14.5-oz) can diced tomatoes with Italian seasoning
- 1 (15-oz) can cannellini beans, drained and rinsed
- 4 oz ditalini pasta
- ½ (10-oz) pkg spinach
- 1 tsp red wine vinegar
Instructions
- Cook onion, carrots, celery, and garlic in hot oil in a Dutch oven over medium heat 5 minutes. Add tomato paste and red pepper. Cook, stirring constantly, 2 minutes.
- Stir in broth, diced tomatoes, and beans. Bring to a boil; stir in pasta. Reduce heat, and simmer 10 minutes or until pasta is tender. Gradually add spinach, stirring until wilted. Add vinegar.

- Bake rolls according to package directions.
