Ingredients

  • 2 lb beef flank steak
  • 1 lb peeled and deveined, large raw shrimp
  • ½ red onion, sliced
  • 2 (6-oz) pkg sliced portobello mushrooms
  • 1 large yellow squash, thinly sliced
  • 1 (12-oz) pkg broccoli florets
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 4 cloves garlic, minced
  • 2 Tbsp coconut aminos
  • 1 tsp crushed red pepper
  • ½ cup walnuts, chopped

Instructions

  1. Season beef with salt and pepper, if desired. Cook beef in large skillet coated in cooking spray, over medium-high heat 6-7 minutes per side or to desired doneness. Remove from skillet. Let stand 10 minutes before slicing.
  2. Season shrimp with salt and pepper, if desired. Cook shrimp in the same skillet coated with cooking spray, over medium high heat 3 to 5 minutes or until done. Remove from skillet.
  3. Add onion, mushroom, squash, broccoli, bell peppers, garlic, and coconut aminos to skillet; cover, reduce heat to medium and cook for 3 to 5 minutes or until softened.
  4. Divide beef, shrimp and vegetable mixture among 6 plates. Top with crushed red peppers and nuts. Serve over Garlicky Cauli Rice recipe.

Side Dish Ingredients

  • 2 (10-oz) pkg frozen cauliflower rice
  • 1 Tbsp ghee
  • 2 cloves garlic, minced
  • ½ tsp salt
  • ½ tsp pepper

Side Dish Instructions

  1. Microwave cauliflower rice according to package directions. Stir in ghee and garlic; sprinkle with salt and pepper.
