Prosciutto-Wrapped Cod
Green Beans AmandineIngredients
- 6 (5-oz) cod fillets
- ¼ cup olive oil, divided
- ½ tsp salt, divided
- ½ tsp pepper, divided
- 6 thin slices prosciutto
- 2 pints grape tomatoes
Instructions
- Preheat broiler. Brush fish with 2 Tbsp oil; sprinkle with ¼ tsp each salt and pepper. Wrap each fillet with 1 slice prosciutto. Place, seam sides down, on a rack in a broiler-safe pan.
- Broil 8 to 10 minutes or until fish flakes with a fork.
- Meanwhile, sauté tomatoes in 2 Tbsp hot oil in a large nonstick skillet over medium-high heat 5 minutes or until beginning to burst.
- Stir in ¼ tsp each salt and pepper. Cook 2 minutes. Serve tomatoes over fish.

- 2 lb green beans, trimmed
- ¼ cup less sodium chicken broth
- 1 clove garlic, minced
- ½ cup sliced almonds
- 1 Tbsp olive oil
- 1 Tbsp lemon juice
Side Dish Instructions
- Place beans, broth, and garlic in a large microwave-safe bowl. Cover tightly with plastic wrap; pierce with a fork. Microwave at HIGH 4 to 6 minutes or until crisp-tender. Drain well.
- Toss beans with nuts, oil, and lemon juice.
