Prosciutto-Wrapped Cod

Ingredients

  • 6 (5-oz) cod fillets
  • ¼ cup olive oil, divided
  • ½ tsp salt, divided
  • ½ tsp pepper, divided
  • 6 thin slices prosciutto
  • 2 pints grape tomatoes

Instructions

  1. Preheat broiler. Brush fish with 2 Tbsp oil; sprinkle with ¼ tsp each salt and pepper. Wrap each fillet with 1 slice prosciutto. Place, seam sides down, on a rack in a broiler-safe pan.
  2. Broil 8 to 10 minutes or until fish flakes with a fork.
  3. Meanwhile, sauté tomatoes in 2 Tbsp hot oil in a large nonstick skillet over medium-high heat 5 minutes or until beginning to burst.
  4. Stir in ¼ tsp each salt and pepper. Cook 2 minutes. Serve tomatoes over fish.

  • 2 lb green beans, trimmed
  • ¼ cup less sodium chicken broth
  • 1 clove garlic, minced
  • ½ cup sliced almonds
  • 1 Tbsp olive oil
  • 1 Tbsp lemon juice

Side Dish Instructions

  1. Place beans, broth, and garlic in a large microwave-safe bowl. Cover tightly with plastic wrap; pierce with a fork. Microwave at HIGH 4 to 6 minutes or until crisp-tender. Drain well.
  2. Toss beans with nuts, oil, and lemon juice.
