Ingredients

  • ½ lb boneless, skinless chicken breasts, cut into 1 inch pieces
  • ¼ tsp salt
  • ⅛ tsp pepper
  • 2 tsp canola oil, divided
  • 1 zucchini, cut into chunks
  • ½ small red bell pepper, cut into chunks
  • ½ small onion, chopped
  • ½ (8-oz) pkg sliced mushrooms
  • 2 Tbsp less sodium soy sauce
  • 2 tsp honey
  • 2 tsp sesame oil
  • 1 tsp cornstarch
  • 1 tsp sesame seeds

Instructions

  1. Sprinkle chicken with salt and pepper. Cook in 1 tsp hot oil in a nonstick skillet over medium-high heat 5 minutes or until browned. Remove from skillet, and keep warm.
  2. Cook zucchini, bell pepper, onion, and mushrooms in 1 tsp hot oil in skillet 8 minutes or until very tender.
  3. Return chicken to skillet. Whisk together soy sauce and remaining ingredients. Pour over chicken, and cook 2 minutes or until sauce is thickened. Serve over Cilantro Cauli-Rice recipe.

  • 1 (10-oz) pkg frozen riced cauliflower
  • 2 Tbsp chopped fresh cilantro
  • 1 Tbsp olive oil
  • ⅛ tsp salt
  • ⅛ tsp pepper

Side Dish Instructions

  1. Cook cauliflower according to package directions. Stir in cilantro, oil, salt, and pepper.
