Greek Chicken and Rice Skillet

Ingredients
- 1 (8.8-oz) pouch microwavable brown rice
- ½ lb boneless, skinless chicken breasts, cut into bite-size pieces
- ⅓ cup chopped onion
- 1 clove garlic, minced
- 2 tsp olive oil
- ⅓ cup freshly shredded Parmesan cheese, divided
- ¼ cup less sodium chicken broth
- 1 (5-oz) pkg baby spinach
- ½ pint grape tomatoes, halved
- ½ Tbsp chopped fresh oregano
Instructions
- Heat rice according to package directions. Cook chicken, onion, and garlic in hot oil in a skillet over medium heat 7 to 9 minutes or until chicken is done.
- Add rice to skillet. Reduce heat to low. Add ¼ cup cheese and broth, cook 2 to 3 minutes, stirring, until creamy.
- Gradually add spinach until wilted. Stir in tomatoes, remaining cheese, and oregano just before serving.
