Sausage, Mushroom, and Spinach Pasta

Ingredients
- 1 (12-oz) pkg fully cooked Italian chicken sausage, sliced
- 2 (8-oz) pkg sliced mushrooms
- ½ onion, sliced
- 1 Tbsp minced garlic
- 1 Tbsp olive oil
- 6 cups chicken broth
- 12 oz penne pasta
- 1 (5-oz) container baby spinach
- 1 Tbsp red wine vinegar
- 1 cup shredded Parmesan cheese
Instructions
- Cook sausage, mushrooms, onion, and garlic in hot oil in a large Dutch oven over medium-high heat 5 minutes, stirring occasionally.
- Add broth and pasta; bring to a boil, reduce heat, and simmer, stirring occasionally until pasta is tender.
- Gradually stir in spinach until wilted; stir in vinegar. Season with salt and pepper, if desired. Sprinkle servings with cheese.

- 1 (18-oz) pkg premium romaine salad
- 1 pint grape tomatoes
- 1 (5-oz) pkg seasoned croutons
- ½ cup zesty Italian dressing
Side Dish Instructions
- Toss together all ingredients in a large bowl just before serving.
