Ingredients
- 1 (12-oz) pkg broccoli florets
- ¾ lb boneless, skinless chicken thighs
- ¼ tsp salt
- ¼ tsp pepper
- 1 Tbsp olive oil
- ⅓ cup less sodium chicken broth
- ⅓ cup heavy cream
- ½ tsp garlic powder
- ½ tsp Italian seasoning
- ½ cup freshly grated Parmesan cheese
Instructions
- Cook broccoli according to package directions. Drain, if needed, and keep warm.
- Meanwhile, sprinkle chicken with salt and pepper. Cook chicken in hot oil in a skillet over medium-high heat 4 minutes per side or until browned.
- Reduce heat to medium; add broth, cream, garlic powder, and Italian seasoning. Cook 4 minutes or until thickened. Add cheese, stirring to melt. Stir in broccoli just before serving.

- 1 cup frozen peas
- ¼ cup toasted sliced almonds
- 1 Tbsp olive oil

- Toss together cauliflower, peas, and remaining ingredients in a medium bowl.
