Ingredients

  • 1 (12-oz) pkg broccoli florets
  • ¾ lb boneless, skinless chicken thighs
  • ¼ tsp salt
  • ¼ tsp pepper
  • 1 Tbsp olive oil
  • ⅓ cup less sodium chicken broth
  • ⅓ cup heavy cream
  • ½ tsp garlic powder
  • ½ tsp Italian seasoning
  • ½ cup freshly grated Parmesan cheese

Instructions

  1. Cook broccoli according to package directions. Drain, if needed, and keep warm.
  2. Meanwhile, sprinkle chicken with salt and pepper. Cook chicken in hot oil in a skillet over medium-high heat 4 minutes per side or until browned.
  3. Reduce heat to medium; add broth, cream, garlic powder, and Italian seasoning. Cook 4 minutes or until thickened. Add cheese, stirring to melt. Stir in broccoli just before serving.

  • 1 (12-oz) pkg frozen riced cauliflower
  • 1 cup frozen peas
  • ¼ cup toasted sliced almonds
  • 1 Tbsp olive oil
  • ¼ tsp salt
  • ¼ tsp pepper

  1. Microwave cauliflower and peas separately according to package directions.
  2. Toss together cauliflower, peas, and remaining ingredients in a medium bowl.
