Spam Musubi

Ingredients
- 1½ cups sushi rice
- 3 Tbsp rice vinegar
- 2 tsp granulated sugar
- ⅓ cup packed brown sugar
- 3 Tbsp soy sauce
- 2 Tbsp mirin
- 1 tsp dark sesame oil
- 2 (12-oz) cans pork luncheon meat, sliced
- 2 Tbsp vegetable oil
- 3 sheets dried seaweed
- 2 green onions, thinly sliced
- 1 tsp toasted sesame seeds
Instructions
- Cook rice according to package directions; cool. Meanwhile, microwave vinegar and granulated sugar in a small bowl, in 15 second intervals, stirring between each, until sugar is dissolved. Stir into rice.
- Whisk together brown sugar, soy sauce, mirin, and sesame oil in a bowl until sugar is dissolved.
- Cook luncheon meat, in batches, in hot oil in a large skillet over medium high-heat 3 minutes per side or until lightly browned. Return all meat to skillet; add sugar mixture, and cook 2 minutes or until sauce is thickened, turning meat to coat. Cool.
- Cut each seaweed sheet crosswise into 4 equal pieces.
- Shape rice mixture into 12 oblong rolls. Top each roll with meat, and wrap in seaweed, pressing ends gently to adhere. Sprinkle musubi with onions and sesame seeds.
