White Bean and Chicken Chili

Ingredients

  • 1½ cups less sodium chicken broth
  • ½ cup chopped onion
  • ¼ cup chopped fresh cilantro
  • 1 Tbsp chili powder
  • 1 Tbsp ground cumin
  • 1 clove garlic, minced
  • 2 (15.5-oz) cans great Northern beans, rinsed and drained
  • 1 (14.5-oz) can diced tomatoes
  • ½ lb boneless, skinless chicken thighs, cut into 2 inch pieces
  • 1 (4-oz) can diced green chiles

Instructions

  1. Combine all ingredients in a 3- to 4-quart slow cooker. Cover and cook on LOW 8 to 10 hours or until chicken is tender.

Side Dish Ingredients

  • ½ (8-oz) container guacamole
  • 3 oz tortilla chips

Side Dish Instructions

  1. Serve guacamole with tortilla chips.
