Turkey Burgers with Sun-Dried Tomato Aïoli

Ingredients

  • 1 lb ground turkey
  • 1 tsp garlic salt
  • ¼ cup roasted garlic mayonnaise
  • 1½ Tbsp sun dried tomato pesto
  • 1 cup baby arugula
  • ½ tomato, sliced
  • ¼ red onion, sliced

Instructions

  1. Preheat grill or grill pan to medium-high heat. Stir together turkey and garlic salt; shape into 3 patties. Grill, covered, 5 minutes per side or until done.
  2. Meanwhile, combine mayonnaise and pesto in a small bowl.
  3. Divide arugula among 3 plates. Serve burgers, tomato slices, and onion slices on arugula. Dollop with mayonnaise mixture.

Side Dish Ingredients

  • 1 oz sliced prosciutto
  • 1½ Tbsp olive oil
  • 1 Tbsp lemon juice
  • ¼ tsp Dijon mustard
  • ⅛ tsp pepper
  • ½ (12-oz) pkg shaved Brussels sprouts

Side Dish Instructions

  1. Place prosciutto in a single layer on a paper towel-lined plate. Cover with another layer of paper towels. Microwave at HIGH 1 to 2 minutes or until crisp. Crumble crispy prosciutto.
  2. Whisk together oil, lemon juice, mustard, and pepper in a large bowl. Add Brussels sprouts and prosciutto; toss.
