Peanut Butter and Jelly Waffles

Ingredients

  • 2¼ cups all purpose flour
  • 3 Tbsp organic granulated sugar
  • ½ Tbsp baking powder
  • ¾ tsp baking soda
  • ½ tsp salt
  • ¼ cup butter, melted
  • ½ cup plus ⅓ cup natural creamy peanut butter, divided
  • 2 cups whole buttermilk
  • 2 large eggs
  • 1 (16-oz) pkg strawberries, sliced
  • ½ cup organic strawberry fruit spread, melted

Instructions

  1. Whisk together flour, sugar, baking powder, baking soda, and salt in a large bowl.
  2. Process melted butter and ⅓ cup peanut butter in a blender until smooth. Add buttermilk and eggs, process until blended; stir into to flour mixture until just combined.
  3. Spoon batter onto waffle iron according to manufacturer's directions; cook 2 to 3 minutes or until done (time will vary). Repeat with remaining batter.
  4. Microwave ½ cup peanut butter at HIGH 20 to 30 seconds or until melted.
  5. Serve waffles with berries, melted peanut butter, and fruit spread.
