Peanut Butter and Jelly Waffles

Ingredients
- 2¼ cups all purpose flour
- 3 Tbsp organic granulated sugar
- ½ Tbsp baking powder
- ¾ tsp baking soda
- ½ tsp salt
- ¼ cup butter, melted
- ½ cup plus ⅓ cup natural creamy peanut butter, divided
- 2 cups whole buttermilk
- 2 large eggs
- 1 (16-oz) pkg strawberries, sliced
- ½ cup organic strawberry fruit spread, melted
Instructions
- Whisk together flour, sugar, baking powder, baking soda, and salt in a large bowl.
- Process melted butter and ⅓ cup peanut butter in a blender until smooth. Add buttermilk and eggs, process until blended; stir into to flour mixture until just combined.
- Spoon batter onto waffle iron according to manufacturer's directions; cook 2 to 3 minutes or until done (time will vary). Repeat with remaining batter.
- Microwave ½ cup peanut butter at HIGH 20 to 30 seconds or until melted.
- Serve waffles with berries, melted peanut butter, and fruit spread.
