Herb-Crusted Cod
Roasted Potatoes and Green Beans with Bacon

Ingredients
- 3 (6-oz) cod fillets
- ¼ tsp salt
- ¼ tsp pepper
- 1 large egg
- ½ cup panko breadcrumbs
- 1 Tbsp butter, melted
- 1 Tbsp chopped fresh dill
- 1 Tbsp chopped fresh parsley
Instructions
- Preheat oven to 425°F. Sprinkle fish with salt and pepper.
- Beat egg lightly in a shallow dish. Stir together breadcrumbs, melted butter, dill, and parsley in a separate shallow dish.
- Dip fish in egg; dredge in breadcrumb mixture, pressing gently to adhere. Place coated fish on a greased rimmed baking sheet.
- Bake 10 to 12 minutes until fish flakes with a fork and breadcrumbs are golden.

- ¾ lb Honey Gold potatoes, quartered
- ½ onion, thinly sliced
- 3 slices center cut bacon, chopped
- ¼ tsp salt
- ¼ tsp pepper
- 1 (8-oz) pkg green beans
Side Dish Instructions
- Preheat oven to 425°F. Toss together potatoes and onion on a rimmed baking sheet; spread in a single layer. Sprinkle with bacon, salt, and pepper.
- Bake 15 minutes. Add green beans; toss and spread in a single layer. Bake 10 minutes or until potatoes are browned and tender.
