Ingredients

  • 3 (6-oz) cod fillets
  • ¼ tsp salt
  • ¼ tsp pepper
  • 1 large egg
  • ½ cup panko breadcrumbs
  • 1 Tbsp butter, melted
  • 1 Tbsp chopped fresh dill
  • 1 Tbsp chopped fresh parsley

Instructions

  1. Preheat oven to 425°F. Sprinkle fish with salt and pepper.
  2. Beat egg lightly in a shallow dish. Stir together breadcrumbs, melted butter, dill, and parsley in a separate shallow dish.
  3. Dip fish in egg; dredge in breadcrumb mixture, pressing gently to adhere. Place coated fish on a greased rimmed baking sheet.
  4. Bake 10 to 12 minutes until fish flakes with a fork and breadcrumbs are golden.

Side Dish Ingredients

  • ¾ lb Honey Gold potatoes, quartered
  • ½ onion, thinly sliced
  • 3 slices center cut bacon, chopped
  • ¼ tsp salt
  • ¼ tsp pepper
  • 1 (8-oz) pkg green beans

Side Dish Instructions

  1. Preheat oven to 425°F. Toss together potatoes and onion on a rimmed baking sheet; spread in a single layer. Sprinkle with bacon, salt, and pepper.
  2. Bake 15 minutes. Add green beans; toss and spread in a single layer. Bake 10 minutes or until potatoes are browned and tender.
