Mushroom and Sausage Toasted Gnocchi

Ingredients

  • 6 Tbsp butter
  • 2 (16-oz) pkg gnocchi
  • 2 tsp Italian seasoning
  • ¾ cup freshly grated Parmesan cheese, divided
  • 1½ lb ground Italian pork sausage
  • 1 (16-oz) pkg sliced mushrooms
  • 2 (14.5-oz) cans no salt added diced tomatoes

Instructions

  1. Melt 3 Tbsp butter in a large skillet over medium heat. Add 1 pkg gnocchi, spreading in a single layer in skillet. Cook 8 minutes or until crisp and tender, turning to brown on all sides. Remove gnocchi from skillet; keep warm. Repeat with remaining butter and gnocchi.
  2. Toss gnocchi with Italian seasoning and ¼ cup cheese.
  3. Meanwhile, cook sausage and mushrooms in a large skillet over medium-high heat 8 minutes or until sausage and mushrooms are browned.
  4. Add tomatoes; cook 5 minutes or until mixture is thickened and sausage is done. Sprinkle with ½ cup cheese. Serve over gnocchi.
