Mushroom and Sausage Toasted Gnocchi

Ingredients
- 6 Tbsp butter
- 2 (16-oz) pkg gnocchi
- 2 tsp Italian seasoning
- ¾ cup freshly grated Parmesan cheese, divided
- 1½ lb ground Italian pork sausage
- 1 (16-oz) pkg sliced mushrooms
- 2 (14.5-oz) cans no salt added diced tomatoes
Instructions
- Melt 3 Tbsp butter in a large skillet over medium heat. Add 1 pkg gnocchi, spreading in a single layer in skillet. Cook 8 minutes or until crisp and tender, turning to brown on all sides. Remove gnocchi from skillet; keep warm. Repeat with remaining butter and gnocchi.
- Toss gnocchi with Italian seasoning and ¼ cup cheese.
- Meanwhile, cook sausage and mushrooms in a large skillet over medium-high heat 8 minutes or until sausage and mushrooms are browned.
- Add tomatoes; cook 5 minutes or until mixture is thickened and sausage is done. Sprinkle with ½ cup cheese. Serve over gnocchi.
