Southwestern Quinoa Chopped Salad

Ingredients
- 1 (4.4-oz) cup microwavable white and red quinoa
- 1 (15.5-oz) can pinto beans, rinsed and drained
- ⅓ cup frozen corn kernels, thawed
- 1 (10.3-oz) Southwest chopped salad kit
- 2 Tbsp fresh cilantro leaves
Instructions
- Cook quinoa according to package directions; let cool slightly.
- Toss together quinoa, beans, and corn in a medium bowl. Add ingredients from salad kits; toss. Divide salad among 3 plates. Top with cilantro.
